Lemon Lavender Scones

Ingredients:

Scone:

  • ½ cup sugar
  • 2 tablespoons lemon zest~3 lemons
  • ¼ cup fresh lemon juice
  • ½ cup milk
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons dried culinary lavender
  • 1 stick—½ cup cold butter, cubed

Make sure the butter is cold. Cube it first and then place it in the fridge until ready to add to the other ingredients. This will keep the scones from overspreading

Lemon Icing:

  • 1 cup powdered sugar
  • 1 ½ tbs lemon juice
  • 1 tsp lemon zes

Directions:

  1. Preheat oven to 375° F and line a large baking sheet with parchment paper.
  2. In a small bowl, combine sugar and lemon zest, rubbing between your clean fingers until a coarse sand-like mixture forms. This helps infuse the lemon flavor.
  3. In a separate bowl, combine milk, lemon juice, vanilla extract, and egg.
  4. In a large bowl, whisk together the flour, baking powder, salt, and lavender. Crumble the lavender in your fingers before adding.
  5. Add the lemon-sugar mixture and stir to combine. Cut in the cold butter until a pea-sized mixture forms. (A pastry cutter is best for this, but a fork can be used instead.) Gently stir in the liquid mixture with a wooden spoon until just combined. Do not over-mix.
  6. Place dough on a lightly floured surface and knead gently with “floured” hands until formed together. Again, do not over-knead; gently push the dough together.
  7. Form the dough into an 8x5-inch rectangle. Cut the rectangle down the middle, lengthwise, and then cut the other side (short side) into thirds to form six squares. Cut each square in half to form two triangles. This will result in 12 small triangles.
  8. Place the scones on the baking sheet with plenty of space in between each one: they will expand when they bake. Bake for 19-22 minutes until bottoms and tops are slightly golden brown. Remove and let cool slightly—a minute or two will do— before transferring to a cooling rack to cool completely.
  9. To make the icing (optional but recommended), stir together the powdered sugar, lemon juice, and lemon zest until combined. Drizzle or paint on cooled scones before serving. You can use a small spatula for this.
